It might sound unexpected, but when the wine is light, fresh and silky — like our Cuve 8a 2019, and the dish is vibrant, crunchy, and full of herbs, the match becomes not just possible, but delightful.

A few words about Cuve 8a 2019

This wine is vinified and aged entirely in concrete vats, with no oak. The result is:

  • supple, juicy texture

  • pure red fruit

  • and a fresh, elegant profile
    It’s made from slightly younger vines than the Grand Vin, but with the same care and precision. It’s now available exclusively in magnum, perfect for summer sharing.

Why it works with summer rolls

  • The wine’s red cherry and floral notes complement the sweet chilli or hoisin-based dipping sauces.

  • Its gentle tannins and freshness match well with the raw vegetables and rice paper.

Homemade Veggie Summer Rolls (serves 4)

Ingredients:

  • 8 rice paper wrappers

  • 1 avocado, sliced

  • 1/2 cucumber, julienned

  • 2 small carrots, julienned

  • 1 handful red cabbage, shredded

  • 1 handful cooked vermicelli rice noodles (optional)

  • Fresh mint, coriander, Thai basil

  • For the dip: hoisin sauce + peanut butter + a dash of lime juice

Instructions:

  1. Soften rice paper in warm water

  2. Fill with a mix of vegetables, herbs, and noodles

  3. Roll tightly and serve with the dipping sauce

  4. Optional: sprinkle crushed peanuts or sesame seeds

How to serve the wine

  • Slightly chilled: around 14–16°C is ideal

  • Serve in large glasses to let the aromas open

  • Use a magnum to share and impress, it elevates even the simplest meal
