Happy easter week!

 

3 tips to prepare for Easter weekend!

  1. Pick a dish or two and find a wine that'll pair perfectly!

Easter is around the corner, and this year we’ll be eating something different, lamb free... We think our 2016 in particular will paid beautifully with this recipe from ‘Elle à table’… 

 INGREDIENTS

  • 200 g de button mushrooms
  • 200g de fresh or frozen morrells (frozen from Waitrose or Sainsbury's are perfect!)
  • 250 g fresh spinache (wash & dried)
  • 1 onion
  • 1 garlic head
  • 8 sheets of lasagne
  • 150 g parmesan 
  • 50 g de mozzarella
  • Sel & poivre
Pour la béchamel :
  • 35 g de flower
  • 50 g de butter
  • 50 cl de hot milk
  • 100 g de parmesan

Prepare your béchamel (butter then flour, milk gradually, stirring all the time). Once thick, add the parmesan.

Peel and chop the mushrooms, morels, chop the garlic.

Fry the garlic and onion in olive oil, once the onions are translucent add the mushrooms and morels. When everything has reduced, add the fresh spinach.

Assemble your lasagne as follows:

    • 1/3 of the spinach/mushroom mixture,
    • some béchamel
    • Mozzarella
    • lasagnes sheets
    • Start over !

Finish with a layer of béchamel, 25-30 minutes in the oven, and finish a few minutes on the grill.

The vine awakens:

 

It’s the end of March and budding has begun, in fact it started almost two weeks ago! But out come the leaves, and it’s 27 degrees, the shoots and the baby grapes will hopefully show themselves soonest. It’s an extremely stressful time for the vigneron, as even though no sub zero temperatures are forecast for the moment, the weather is most unpredictable, and one night of extreme cold, at this time of year, can significantly reduce, or destroy a year’s harvest… we need to hold on to the end of April, by which time we should be in the clear...
